Egg White Meledy

I’m starting my blog off just like I start my day, action packed and full of energy! This breakfast item not only gets me going because there’s enough protein and fiber to knock out Popeye, but it’s just so darn colorful and happy!

When I decided to make this I opened my fridge and realized I needed to do a produce sweep. I sautéed some spinach, onions, bell peppers, and kale, threw in some egg whites (no LDL-c’s here!) and turmeric. Turmeric is an excellent, all-natural, anti-inflammatory and great for relief with arthritis. In moderation, it has a subtle peppery taste and a mild ginger odor. I topped it off with black beans (beans beans they’re good for your heart… and you’re digestive tract too!) flax seed, and avocado.

I’ve been on a running kick and what better way to fuel my body than with some heart healthy, protein packed, and fiber rich foods! This recipe is simple and is really just a jumble of goodness.

1/3 cup of egg whites
1/2 cup spinach
1/2 cup kale
1/4 cup diced onions
1/2 TBSP Turmeric
1/2 bell pepper
1/4 cup black beans
1/2 TBSP flax seed
1/4 Avocado

Sautee the onions and bell pepper first with 1/2 TBSP olive oil. Once the onions reach a soft consistency add spinach and kale. Let them cook down and add egg whites. Top with beans, flax, and avocado. Enjoy!

P.s. I added some Cholula hot sauce. This stuff is my crack and I’m going to create my own soon.
