Week of 5.11

Spring has been in the air. Typically NC doesn’t have much of a spring so I’ve been relishing in the crisp air. I decided to play up the fresca feelings by taking a trip to the Mediterranean for meal prep this week. I find that picking a theme each week helps with the creative block. I also find it a great way to make some of those bucket list items a bit healthier!

Meal prep this week took HALF of the amount of time as last week. It was helpful to have several things cooking at once and pre-cooked chicken kebabs from Costco!

I woke up this morning feeling a bit under the weather and decided I needed a nostalgic snack. I can’t remember the last time I had ants on a log! After making it I started to think of all of the possible variations. Cream cheese and olives. Cashew butter and dried raspberries. hmm. Maybe next week will be a play on the classics or other childhood memories!

On the menu this week: 5/11 – 5/9

  • Breakfast: protein oats
    • 50g rolled oats, 10g fresh walnuts, 35g pea protein isolate, 100g fresh blackberries, 50g 0% Fage
      • 44.3 P / 55.5 C / 12.5 F
  • Lunch: Mediterranean bowls
    • 2 chicken kebabs, 1/4 cup dry brown rice, 15 g 0% Green yogurt, feta cucumber salad adapted from here

  • Snack: ants on a log and a bite of a chocolate chip scone*
    • 110g celery, 16g PB fit, 1 T creamy peanut butter, 10 g raisins

  • Dinner: Moussaka!

      • Using what was left around the house and wanted to lighten it up
      • 3 lbs of ground turkey mixed with 2 hamburger patty
      • Mix of sweet potato and yellow potatoes on top
      • Subbed zucchini for eggplant
      • Added in some kale and mushrooms!

  • Dessert: yogurt and apple with citrus cornmeal cake!
    • 100 g 0% fat Greek yogurt, 100 g apple, 5g vanilla egg white protein, 1 serving citrus cornmeal cake

Note: the asterisked meals (snack and dessert) are the flexible meals and change day to day. Today which is my typical day for taking photos I woke up with a bad stomach bug so my appetite wasn’t quite there for most of the morning. I sprinkled in some Greek yogurt a few more times than usual just to get some probiotics in there! I also was really wanting something comforting and nostalgic (hence the ants on a log and bite of a scone) but I likely will not be doing that every day this week;)

The shopping list below outlines enough for four people for 6 days for lunch. I made a mis-calculation on the dinner and it will only last us through Wednesday. We have enough leftover ingredients for me to whip something up Thursday and Friday! Some of the items purchased this week were form Costco so they’ll be around for the long haul. Some items I also had on hand from last week (spices, oil, protein powder, potatoes, onions, flour, etc.) Comment for recipes!
